A just because invitation for a sauce flight: four sauces set out in order, a tray of plain wings, and a table that works through them one at a time. The first is red and reasonable. The second is sweeter than it looks and arrives late. By the third, people are reading the label before they commit.

The fourth is where the evening turns. One guest announces that heat has no effect on him, goes straight to the brown one, and spends the next ten minutes at the sink saying nothing. The rankings get written down anyway, in his handwriting, because he offered. The milk runs out before the wings do.

What to actually tell people

Pour the flight in order Four small ramekins, mildest to worst, set left to right and numbered one through four. Keep what is in the fourth to yourself until the cards are filled in.
Buy the wings plain Drums and flats, salt only, nothing on them before they reach the table. The sauce is the variable, so count two wings per guest per sauce and cook more than that.
Set up relief before the third sauce Cold whole milk, sour cream and white bread do the work. Water does not. Put the roll of towels by the sink and leave it there.
Keep a record Index cards, each sauce scored out of ten for heat and flavour separately, tallied when the fourth is done. The result decides the order next time, and it settles the argument in the group chat for roughly a week.
